You will love the comforting taste of the delicious tender chicken breast paired with fluffy stuffing all slow cooked in a rich gravy. Yum. Tip: Add green beans for a meal in one - voila!     Literally 4 Ingredients. This easy crockpot chicken with stuffing is perfect for busy nights! With 4 ingredients and only 5 minutes, you will have this prepped and slow cooking in the crock pot. It's hands-off and so simple to make!

    Here's what you'll need to make this 4 ingredient slow cooker chicken with stuffing casserole:

    • Boneless Skinless Chicken Breasts: I used chicken breasts but if I need to be away from the crock pot for longer than 4 hours, I used chicken thighs - they don't dry out as quickly.
    • Dry Boxed Stuffing Mix: chicken flavor or herb had the best flavor!
    • Condensed Cream of Chicken Soup: regular of a lower-fat cream of chicken soup may be used.
    • Chicken Broth: broth or stock can be used, some is mixed into the soup and some is blended with the stuffing.
    • Optional Add-in: 10-ounce bag of frozen green beans.
    • Optional thickener: cornstarch can be added to thicken the sauce, if desired.

    Variations

    Here are some suggestions for customizing your dish:

    • Make it a 5-ingredient crock pot chicken and stuffing - and a meal-in-one 🙂 by adding a 10-ounce bag of frozen green beans over the chicken breasts . Whisk in 1 tablespoon of cornstarch with the chicken soup and broth to help thicken the extra juice from the green beans.
    • ¼ cup melted butter can be drizzled over the top of the stuffing prior to serving.
    • ½ cup sour cream can be mixed into the soup and water before cooking.

    How To Make Crock Pot Chicken and Stuffing

    1. In a small bowl, mix the cream of chicken soup and half of the chicken broth (add cornstarch here if adding green beans).

    2. Pour a third of the soup mixture on the bottom of the crock pot then place chicken breasts on top. Pour the remaining soup over the top.

    3. In a medium-sized bowl, mix the box stuffing mix and the remaining half of the chicken broth.

    4. Spoon the stuffing over the chicken. Cook on low until chicken is done.

    How to Serve It

    • Adjust the salt and pepper to taste. Garnish with fresh parsley or sliced green onions for added freshness.
    • This recipe pairs well with mashed potatoes or rice.
    • Meal idea! Serve your chicken and stuffing over mashed potatoes with a side of green beans or sweet corn and a roll or breadstick.

    Slow Cooker Tips

    Tip #1: Chicken breasts can dry out if left to cook too long. Only cook them until they reach 165 degrees F. If you are concerned, chicken thighs can be used instead.

    Tip #2: After cooking, there may be quite a few juices at the bottom of the crock pot. Work the stuffing into the juices and fluff if needed.

    Tip #3: If you add frozen green beans, be sure to whisk 1 tablespoon of cornstarch into the broth to help thicken the additional liquid that green beans will add.

    To store leftovers, let the chicken and stuffing cool completely, then transfer to an airtight container and refrigerate for up to 4 days. 

    How to freeze it

    To freeze 4-ingredient slow cooker chicken with stuffing, let it cool, transfer to a freezer-safe container and freeze for up to 4 months. Thaw in the refrigerator.

    How to reheat it

    Reheat in a microwave-safe dish, on 50 % power for 1 to 3 minutes, stirring frequently.

    Can raw chicken be added to a crock pot?

    Yes, chicken can be added raw to the crock pot. It's quite common and yields the best results.

    Ingredients
      

    • 2 pounds boneless skinless chicken breasts (about 6 to 8 breasts)
    • 1 (10.5-ounce) can cream of chicken soup (low sodium)
    • 2 cups low-sodium chicken broth (divided)
    • 1 (6-ounce) box of chicken or herb-flavored packaged stuffing mix
    • Optional: make it a meal-in-one and add 1 (12-ounce) bag frozen green beans

    Instructions
     

    • Spray slow cooker with nonstick spray.
    • In a small bowl, mix the cream of chicken soup and 1 cup chicken broth together.
    • Spread a third of the soup mixture on the bottom of the crock pot, then place chicken breasts on top. If using green beans, add them over the top of the chicken. Then, pour the remaining soup over the top.
    • In a medium-sized bowl, mix dried stuffing mix and 1 cup chicken broth. Spoon over the chicken.
    • Cover and cook on low heat for 3 to 5 hours or until the chicken is done (no longer pink, and the internal temperature should be 165 degrees F.)
    • Fluff and stir any dry stuffing into the pot juices before serving. Season to taste with salt and pepper if needed.
