- 1 green bell pepper (diced)
- 1 medium onion (finely chopped)
- 24 ounces marinara sauce
- 2 tablespoons tomato paste
- 1 (14.5-ounce) can fire-roasted diced tomatoes (plain diced tomatoes are fine too)
- 6 cups chicken broth
- 1 tablespoon italian seasoning
- ½ teaspoon kosher salt
- ½ teaspoon ground black pepper
- 6 ounces rotini pasta
- ½ cup parmesan cheese (freshly grated)
- optional garnish: fresh chopped parsley or basil for garnish
Instructions
- Add all ingredients except the dry pasta and cheese to the slow cooker. Cover and cook on low for 4 to 6 hours.
- Remove chicken and shred with 2 forks. Return chicken to the pot.
