How to serve it.

This lemon pepper chicken crockpot recipe is incredibly versatile and pairs well with plenty of easy side dishes.
- Sprinkle with freshly grated parmesan cheese, chopped parsley, or fresh basil before serving.
- Spoon the chicken and sauce over fluffy white rice, mashed potatoes, or buttered egg noodles.
- Serve with roasted broccoli, green beans, or asparagus for an easy vegetable side.
- Add a simple green salad with a light vinaigrette to balance the creamy sauce.
- Pair with warm crusty bread to soak up every bit of the flavorful sauce.
Kori's tips.
- Don't skip the lemon zest because it gives the sauce much brighter flavor than juice alone.
- Squeeze as much moisture as possible from the thawed spinach so the sauce stays creamy.
- Chicken breasts cook fairly quickly, and every slow cooker runs a little differently. For juicy, tender chicken, cook just until the thickest part reaches 165°F.
- Give the sauce a quick stir before serving so everything is evenly combined.
- Leftovers taste even better the next day after the flavors have had more time to mingle.
