    The backstory.

Rotel dip is one of those appetizers that has been around forever, and for good reason. It's simple, cheesy, and pretty much made for a bowl of tortilla chips. My version uses chili instead of ground beef, which means there's no meat to brown first and fewer dishes to deal with. Just three ingredients into the crock pot, give it a stir now and then, and you've got a hot, crowd-friendly dip ready when everyone gets hungry.

    It's a must make.

This Rotel dip crock pot recipe is my answer when I need an easy appetizer that doesn't require hovering over the stove.

    • Only 3 ingredients. Velveeta, chili, and Rotel come together for a creamy, flavorful dip without a long grocery list.
    • No meat to brown. Using canned chili keeps the prep especially quick and easy.
    • Made for parties. Once the cheese melts, switch the crock pot to warm and let everyone dip away.
    • Easy to change up. Swap the chili for ground beef or sausage, or use salsa instead of Rotel to make it your own.

    Let's talk flavor and texture.

Crockpot Rotel dip is rich, creamy, and seriously cheesy, with just enough tomato and green chile flavor from the Rotel to keep every bite interesting. The chili gives it a hearty, savory texture, while the melted cheese makes everything smooth and scoopable. Grab a crunchy tortilla chip and you've got that salty, cheesy, creamy combination that's hard to stop dipping into.

    What you'll need.

Slow cooker Rotel dip ingredients needed.Pin

Slow cooker Rotel dip keeps things super simple with just three easy ingredients you can grab just about anywhere.

    • Rotel diced tomatoes and green chilies: Adds tomatoes, green chilies, and a little kick without needing extra seasonings.
    • Processed American cheese: One block of Velveeta or a store brand melts smoothly and gives the dip its creamy, cheesy texture.
    • Chili, no beans: Adds hearty flavor and makes this dip filling without having to cook ground meat separately.

For exact ingredient quantities, please see the recipe card below!

How to make Rotel dip in a crock pot.

Here's an overview on how to make this recipe. See the recipe card below for complete instructions. Enjoy!

    1. Add the Rotel, cheese cubes, and chili to your slow cooker.
    2. Cover and cook on low for 1 to 2 hours, stirring periodically as the cheese melts.
    3. Once everything is completely melted, stir until the dip is creamy and well combined.
    4. Switch the slow cooker to warm and serve right from the crock pot.

    Make it your way.

Making Rotel dip in a crock pot is easy to customize depending on what you have on hand or what everyone likes.

    • Replace the canned chili with ½ pound of cooked and drained ground beef for a classic meaty version.
    • Swap the chili for ½ pound of cooked and drained ground sausage for a little extra savory flavor.
    • Use salsa in place of the Rotel diced tomatoes and green chilies to change up the tomato and chile flavor.
    • Add a packet of taco seasoning for extra flavor.
    • Choose your favorite variety of Rotel if you'd like to adjust the heat level.

If easy dips and snacks are your love language, I've got a few more to add to the party lineup. My Restaurant Style Crockpot Salsa Recipe is fresh, flavorful, and perfect for endless chip dipping, while this Hot Pimento Cheese Dip (Crockpot) is warm, creamy, and extra cheesy. And when you're craving something hearty, my Easy 5-Ingredient Crockpot Reuben Dip has all those classic Reuben flavors in one scoopable dip.

    How to serve it.

Crockpot rotel dip being scooped with a tortilla chip.Pin

Keep this Rotel dip crock pot warm right in the slow cooker and set out plenty of dippers so everyone can grab their favorite.

    • Serve it with sturdy tortilla chips for scooping up plenty of cheesy dip.
    • Put out corn chips for an extra salty, crunchy option.
    • Add raw vegetables such as celery sticks, bell pepper strips, or carrots for another easy dipper.
    • Make it part of a game day appetizer spread with wings, meatballs, sliders, or other finger foods.
    • Keep the crock pot on the warm setting during your party so the dip stays creamy and ready to serve.

    Kori's tips.

    • Stir the dip frequently while it melts to help the cheese melt evenly and prevent it from burning along the edges.
    • A 2 to 3-quart crock pot is just the right size for this recipe and helps keep the dip nice and deep for easy scooping.
    • Once the cheese is fully melted, switch the slow cooker to warm instead of continuing to cook it on low.
    • If you're substituting ground beef or sausage for the canned chili, cook and drain the meat before adding it to the crock pot.
    • Cut the cheese into chunks so it melts more evenly with the Rotel and chili.

    FAQ's

What is the best way to store it?

Store your leftover dip in an air-tight container in your refrigerator for up to 5 days.

How do you keep cheese dip from burning in a crock pot?

The two main steps you can take to help prevent the cheese dip from burning to your crockpot are by using a non-stick spray before adding your ingredients and by stirring often! You can use a crockpot liner to make cleanup easier afterward as well, but it is not required.

What's the best way to reheat it?

Reheat in the microwave in a microwave-safe bowl, and remember to cover it to prevent a mess. Microwave on high for 1 minute and stir. Continue cooking in 30-second increments and stir between each time. You can also heat it in a saucepan on the stove until the cheese is melted and heated to your desired temperature.

Does Rotel need to be drained?

No, it does not need to be drained! The little liquid in the can, can be added to the dip because it is so little, and it will help the cheese mix together. It also adds great flavor to add to the dip!
