    • 24 ounces smoked sausage (sliced into 1-inch pieces)
    • 24 ounces halved baby potatoes
    • 1 medium yellow onion or 1 cup frozen chopped onion
    • 3 teaspoons minced garlic
    • 1 cup chicken broth
    • 2 tablespoons olive oil
    • 1 teaspoon smoked paprika
    • 1 teaspoon garlic powder
    • ½ teaspoon onion powder
    • ½ teaspoon dried thyme
    • ½ teaspoon kosher salt (plus extra to taste)
    • ¼ teaspoon black pepper (plus extra to taste)
    • 1½ tablespoons each cornstarch and cold water or broth
    • 1 to 1½ cups shredded cheddar or colby Jack cheese
