Here are the ingredients you will need to make these delicious crockpot mashed potatoes:
- Yukon Gold Potatoes: I used yukon gold potatoes because they have less starch and result in fluffier lighter potatoes. My second choice is russet potatoes. They are higher in starch and result in creamier, denser mashed potatoes in the crock pot.
- Garlic Powder: fresh garlic may be used.
- Low Sodium Chicken Broth: chicken broth or stock is fine to use, as well as vegetable broth.
- Unsalted Butter: salted butter may be used, but adjust the amount of salt added by a ¼ a teaspoon and add back if needed.
- Sour Cream: regular or light sour cream is fine.
- Cream Cheese: be sure to soften the cream cheese before adding.
- Half and Half: used to moisten the mashed potatoes. Heavy cream can also be used.

Here's how to make these easy slow cooker mashed potatoes:
- Spray a 4 to 6-quart crock pot with nonstick spray.
- Add potatoes, garlic powder, and chicken broth. Cover and cook on low for 4 to 6 hours or until potatoes are very soft and mash with a fork easily. Stir the potatoes about halfway through cooking time.
- About 30 to 60 minutes before serving time, add the butter and softened cream cheese. Stir until melted.

Tip #2: Some like their mashed potatoes extra creamy and some like them with bits of chunkiness. If you like them super creamy you can add extra half and half and mix until the desired consistency is reached.
Tip#3: Avoid over-mixing and over-stirring the potatoes as they can get a sticky gluey consistency due to the starch.
