Trending Soup Recipe. I have been making this soup for years! I have been seeing it all over social media lately, and for good reason--it's super easy and so delicious. It's also quick to throw together in the slow cooker!
Loaded with Flavor! All your favorite flavors of classic lasagna are put into a soup that is slow-cooked until your noodles are tender and all ingredients are warm and combined. Italian seasoning, Italian sausage, onion, garlic, fire-roasted tomatoes, marinara, and all the cheese you could want!
Meal Ready. This recipe is perfect for dinner any night of the week! I especially love that there are normally enough leftovers that I can look forward to for lunch the next day as well!
Lasagna Soup Slow Cooker Recipe Ingredients
Here are the ingredients you will need to make this easy lasagna soup:
- Ground Beef: you can use any percentage of beef that you would like! I have used 80/20 but prefer leaner in this recipe, such as a 90/10.
- Italian Sausage: choose hot or mild sausage based on your spice preference. I usually grab mild when making it for the family and can add additional spice if wanted.
- Onion: use white, yellow, or sweet onion in this recipe for the best result.
- Minced Garlic: mince your own fresh garlic or use store-bought pre-minced garlic to save time.
- Marinara Sauce: any brand of marinara sauce can be used in this recipe. Look for low carb/sugar options if looking to try and stay lower carb.
- Tomato Paste
- Canned Fire Roasted Tomatoes: you can find these with the rest of the canned vegetables and tomatoes. You can use regular diced tomatoes if you wish to.
- Chicken Broth: regular or low sodium is just fine in this recipe, so choose whichever fits your needs best.
- Italian Seasoning: most Italian seasonings are made up of basil, oregano, rosemary, marjoram, and thyme. You can use a pre-mixed option or make your own mixture using these herbs at equal ratios.

- For any soup recipe in the crockpot, I highly recommend using a crockpot liner to prevent burning to the side of your crockpot and for an easy cleanup!

- ½ pound ground beef
- ½ pound italian sausage
- 1 medium onion (chopped)
- 2 teaspoons minced garlic
- 24 ounces marinara sauce
- 2 tablespoons tomato paste
- 1 (14.5-ounce) can fire-roasted diced tomatoes (plain diced tomatoes are fine too)
- 6 cups chicken broth
- 1 tablespoon italian seasoning
- 2 bay leaves
- 6 lasagna noodles (broken into 2" pieces)
- 1 cup shredded mozzarella
- 1 cup ricotta cheese (cottage cheese may be used)
- ½ cup parmesan cheese
- salt and pepper to taste
- optional garnish: fresh chopped parsley or basil for garnish
Instructions
- Crumble and brown the ground beef, Italian sausage, and onions in a medium skillet over medium high heat. Drain the fat and place in the slow cooker.
- Add cooked meat, onions, garlic, broth, marinara sauce, diced tomatoes, tomato paste, italian seasoning, and bay leaves to a slow cooker. Cover and cook on low for 3 to 4 hours. Remove the bay leaves.
- Add the noodles to the slow cooker. Cover and continue cooking until the noodles are tender, about 15 to 20 minutes.
