1½tablespoonseach cornstarch and cold water or broth
1 to 1½cupsshredded cheddar or colby Jack cheese
Optional garnish:chopped parsley, green onions, or chives
Instructions
Add the ingredients, except cheese, to the slow cooker. Stir together.
Cover and cook on low for 6 hours or high for 3 to 4 hours, until the potatoes are fork-tender.
Whisk together the cornstarch and water. Add to the slow cooker and stir. Cover and let thicken for about 5 minutes.
Stir in the cheese and let it melt. Give it another stir, serve and garnish.
