- Broil for texture. A few minutes under the broiler gives that golden, crispy skin.

Herb Butter Crockpot Turkey Breast (Bone-In) with Gravy
Ingredients
Turkey
- 1 onion quartered
- 2 celery stalks chopped
- 2 carrots chopped
- ½ cup unsalted butter softened
- 3 garlic cloves minced
- 1 tablespoon chopped fresh rosemary
- 1 tablespoon chopped fresh thyme
- 1 tablespoon chopped fresh sage
- 1 teaspoon salt
- ½ teaspoon black pepper
- 4½ to 5 pounds bone-in turkey breast
- 1½ cups chicken or turkey broth
Gravy
- 3 tablespoons butter
- 3 tablespoons all purpose flour
- 2 cups reserved pot juices + extra broth if needed
- Salt and pepper to taste
Instructions
To make turkey:
- Layer onion, celery, and carrots in the bottom of a 6-quart slow cooker. Place the turkey breast on top of the vegetables (temperature gauge up, if it has one).

- Mix butter, garlic, rosemary, thyme, sage, salt, and pepper. Rub half under the skin and the rest over the turkey. Pour broth around the sides of the turkey.

- Cover and cook on HIGH 3 to 5 hours or LOW 6 to 7 hours, or until the internal temperature reaches 160°F.

- Optional browning of the skin: transfer to a baking sheet, sprinkle the skin with salt and pepper. Broil 4 to 6 minutes for crispy, golden skin. Let rest 10 to 15 minutes before slicing. (Note: you can slice each breast off the bone or leave the meat attached to the bone and broil, you may have to turn it around a few times to get good color.)

To make gravy:
- In a skillet, melt 3 tablespoons of butter over medium heat, then whisk in 3 tablespoons of flour. Cook 1 to 2 minutes until smooth and lightly golden.

- Strain the slow cooker pot juices into a bowl and discard the vegetables. Slowly whisk in 2 cups of strained drippings (add broth if needed to make up 2 cups), stirring constantly.

- Simmer 4 to 6 minutes, or until thickened to your liking. Season with salt and pepper.
