    Here are the ingredients you will need to make these crockpot carrots:

    • Baby Carrots: for convenience, you can use the bagged baby carrots; otherwise, cut peeled carrots into larger bite-sized pieces. The recipe cooking time is based on the prepared bags of baby carrots which are slightly larger.
    • Salted Butter
    • Soy Sauce: regular, low sodium, coconut aminos, or tamari will all work in this recipe.
    • Orange: you will need one large orange, freshly squeezed orange juice, and the zest from the orange.
    • Maple Syrup: pure maple syrup is the best choice for this dish.
    • Seasonings: cinnamon, nutmeg, cayenne pepper, salt, and pepper.
    • Herbs: fresh thyme sprig.

    • Adjust the maple syrup to taste.
    • Honey or brown sugar can be used in place of the maple syrup.

    • 3-quart crock pot

    Ingredients
      

    • 16 ounces baby carrots
    • ½ cup water
    • 1 orange orange (from that orange you will need ½ teaspoon orange zest + ¼ cup orange juice)
    • 3 tablespoons butter
    • 3 tablespoons maple syrup
    • 2 teaspoons soy sauce
    • ¼ teaspoon cinnamon
    • ¼ teaspoon nutmeg
    • pinch cayenne pepper
    • 1 sprig fresh thyme (leaves removed and minced)
    • salt and pepper to taste

    Instructions
     

    • Add carrots and water to the crockpot. Cover and cook on low for 3 to 4 hours on low (2 to 3 hours on high), or until the carrots are tender.
    • Drain carrots and return to the crockpot to keep warm.
    • Add the remaining ingredients to a small saucepan. Stir together until melted.
    • Drizzle with maple syrup mixture and toss together. Salt and pepper to taste. Garnish with additional fresh thyme.
