Herb Butter Crockpot Turkey Breast (Bone-In) with Gravy
This bone-in slow cooker turkey breast is juicy, flavorful, and perfectly seasoned with herb butter and garlic. Ideal for small holiday meals or cozy dinners—plus, the drippings make the most delicious gravy!
Layer onion, celery, and carrots in the bottom of a 6-quart slow cooker. Place the turkey breast on top of the vegetables (temperature gauge up, if it has one).
Mix butter, garlic, rosemary, thyme, sage, salt, and pepper. Rub half under the skin and the rest over the turkey. Pour broth around the sides of the turkey.
Cover and cook on HIGH 3 to 5 hours or LOW 6 to 7 hours, or until the internal temperature reaches 160°F.
Optional browning of the skin: transfer to a baking sheet, sprinkle the skin with salt and pepper. Broil 4 to 6 minutes for crispy, golden skin. Let rest 10 to 15 minutes before slicing. (Note: you can slice each breast off the bone or leave the meat attached to the bone and broil, you may have to turn it around a few times to get good color.)
To make gravy:
In a skillet, melt 3 tablespoons of butter over medium heat, then whisk in 3 tablespoons of flour. Cook 1 to 2 minutes until smooth and lightly golden.
Strain the slow cooker pot juices into a bowl and discard the vegetables. Slowly whisk in 2 cups of strained drippings (add broth if needed to make up 2 cups), stirring constantly.
Simmer 4 to 6 minutes, or until thickened to your liking. Season with salt and pepper.
