    Delicious Family Favorite. I have been making this recipe for my family for years. It's a favorite of everyone's because you can't really go wrong with a classic scalloped potatoes recipe with ham and cheese!

    Leftover Ham. I have several leftover ham recipes and this is one of my favorites! P.S. You don't need leftovers to make this - any cooked ham or a ham steak will do.

    Scalloped Potatoes and Ham Crockpot Recipe Ingredients

    Here are the ingredients you will need to make crockpot scalloped potatoes and ham in the crockpot:

    • Russet Potatoes: this recipe calls for starchy potato varieties, which is why the russet potato is used.
    • Ham Steak: you can use a ham steak, leftover ham cut into cubes, or purchased diced ham. All varieties work great in this recipe!
    • Milk: depending on your dietary preference, you can use whole milk, 2%, half and half, or creamy oat milk in this recipe.
    • Cornstarch: is used in this recipe as a thickener to help make the scalloped potatoes creamy, gooey, and rich.
    • Monterey Jack Cheese
    • Sharp Cheddar Cheese
    • Parmesan Cheese
    • Seasonings: dried minced onion, salt and pepper.
    • Herbs: dried thyme.

    • Use leftover ham if you have it on hand! You can also use a cooked ham steak or pre-diced ham to save some time.
    • Use a different cooked protein like smoked sausage or kielbasa if desired.
    • You can use other potato varieties, such as Yukon gold potatoes, but your cooking times may vary or shorten based on the potato's density and starch content.
    • Substitute the shredded cheddar cheese with other varieties of cheese you might like (Swiss, gouda, jack, and just about any smoked cheese).
    • You can swap the cream of mushroom soup for a different condensed soup flavor such as chicken, cheddar cheese, celery, or golden mushroom.

    How to store it

    Allow your leftovers to cool and then transfer to an air tight container. Store in the fridge for up to 5 days.

    How to reheat

    Transfer the amount you want to reheat to a microwave safe dish. Cover and microwave on low for 1 minute. Stir, then continue to heat in 30 second increments until your desired temperature.

    Why is my scalloped potatoes and ham watery?

    It could be the ham contained a lot of water or you used too much liquid in the recipe. Using a starchy potato such as a russet helps to thicken juices. Avoid using soft or waxy types of potatoes for the best result.

    Why won't my scalloped potatoes get soft?

    If your potatoes are cooking in an acidic environment the starch from the potatoes will prevent the potatoes from cooking properly. Don't add too much acidity (lemon juice, vinegar, etc) while cooking - save it for the end.

    How far in advance can you slice potatoes for scalloped potatoes?

    If you want to do some meal prepping, slice the potatoes up to 24 hours in advance and store completely submerged in water. This will keep them from discoloring.

    Ingredients
      

    • 1 (10.5-ounce) can condensed cream of mushroom soup
    • ¾ cup milk
    • 2 tablespoons cornstarch
    • 2 teaspoons dried minced onion
    • ½ teaspoon dried thyme
    • ½ teaspoon salt (plus extra to taste)
    • ½ teaspoon ground black pepper (plus extra to taste)
    • 1 cup shredded Monterey jack cheese
    • 1 cup shredded sharp cheddar cheese
    • ½ cup finely grated parmesan cheese
    • 16 ounces ham steak (diced into bite-sized pieces)
    • 2½ pounds russet potatoes (peel and sliced ⅛" thick)
    • optional: top with up to ½ cup additional shredded cheese and garnish with minced chives.

    Instructions
     

    • In a medium bowl whisk together that cream of mushroom soup, milk, constarch, dried onion, salt, pepper, and thyme.
    • Place the potatoes, ham, and grated cheeses in the crockpot.
    • Pour the soup and milk mixture over the top and stir everything together.
    • Cover and cook on low for 5 to 6 hours or until the potatoes are tender and cheese is melted. Let potatoes sit for 10 to 15 minutes before serving.
