    The backstory.

Even if you didn't grow up eating pimento cheese, it's hard not to fall for it once you've had a really good version. Living in the South, pimento cheese shows up everywhere - from restaurant menus to backyard gatherings - and it quickly becomes a favorite. After serving it cold plenty of times, turning it into a warm dip felt like the next logical step. Using the crockpot keeps it hands-off and makes it easy to serve without worrying about reheating in the oven or transferring from a baking dish.

    It's a must make.

This hot pimento cheese dip crockpot is one of those recipes you'll reach for again and again.

    • Southern-inspired comfort. It delivers all the flavor of classic pimento cheese in a warm, creamy dip that feels extra special.
    • Crowd-friendly. This cheese dip is easy to love and disappears quickly, whether you're serving family or friends.
    • Low-effort prep. Everything comes together in the crockpot, saving time and freeing up the oven.

    Let's talk flavor and texture.

This dip is rich, creamy, and smooth, with sharp cheddar cheese providing depth and cream cheese adding body. Pimentos bring a subtle sweetness, while Worcestershire sauce adds just enough savory flavor to balance the cheese. Bacon melts into the dip, adding saltiness without making it greasy, and the texture stays perfectly scoopable thanks to the combination of shredded cheese and cream.

    What you'll need.

Ingredients needed to make hot pimento cheese dip crockpot on a white marble countertop.

Here's what goes into this crockpot pimiento cheese dip, using simple ingredients that work together for big flavor.

    • Cheddar cheese: Freshly shredded cheese melts smoothly and gives the dip its signature flavor.
    • Cream cheese: Using ounces cream cheese helps create a rich, creamy base.
    • Pimentos: These add color and a mild sweetness without overpowering the dip.
    • Onion: Finely grated onion blends in without chunks.
    • Worcestershire sauce: A teaspoon worcestershire adds depth and balances the cheese.
    • Bacon: Cooked and crumbled for smoky flavor.

    Notes

For more helpful hints, substitution ideas, slow cooking tips, and other delicious recipe ideas, check out my post above.
CROCKPOT COOKING TIPS: Every slow cooker heats a little differently, so cooking times can vary. Once you know how your crock pot runs (hotter or cooler), you can adjust as needed.
TIPS: Use freshly shredded block cheese for the best melt, and don’t skip the cornstarch — it helps stabilize the cheese while absorbing excess bacon grease. Make sure the cream cheese is softened so it blends smoothly into the dip.
VARIATIONS: Make it spicy with diced jalapeños, cayenne, or pepper jack cheese. For a subtle Southern twist, stir in 1 to 2 teaspoons of bourbon or whiskey for extra warmth and depth. A pinch of smoked paprika or a handful of sliced green onions also adds great flavor.
SERVING SUGGESTIONS: Serve warm with crackers, fresh bread, or spread over crispy toasted slices of French bread. Keep the dip on WARM in the crockpot so it stays creamy for easy entertaining.
