    The backstory.

Reuben flavors are one of those things that just work - salty beef, tangy sauerkraut, creamy dressing, and melted cheese. Turning a reuben sandwich into a slow cooker dip felt like a no-brainer, especially for game days, holidays, or anytime you need a hands-off appetizer that serves a crowd.

Reuben crockpot dip is a must make.

This slow cooker reuben dip is a keeper for so many reasons.

    • Crowd-friendly. This dip recipe makes enough to serve a group without constant refills.
    • Big deli flavor. All the classic reuben flavors are here in every bite.
    • Easy prep. Everything goes straight into the crock pot with minimal prep time.
    • Warm and creamy. The slow cooker keeps the cheese perfectly melted for hours.

    Let's talk flavor and texture.

This reuben crockpot dip is rich, creamy, and savory with just enough tang from the sauerkraut and thousand island. The corned beef adds hearty beefy flavor, while the swiss cheese and cream cheese melt into a smooth, scoopable texture that clings perfectly to rye bread or crackers.

    What you'll need.

This crock pot reuben dip uses simple ingredients you may already recognize from a traditional reuben sandwich.

    • Corned beef: Canned corn beef works great here, but sliced corned beef chopped into small pieces also works well.
    • Sauerkraut: Be sure it's well drained so the dip doesn't turn watery.
    • Thousand island dressing: You'll need about ¾ cup thousand island for classic flavor.
    • Cheese: Swiss cheese gives you that signature reuben taste, while cream cheese makes the dip rich and smooth.
    • Dressing options: Thousand island dressing is traditional, but russian dressing can be used if that's what you prefer.

For exact ingredient quantities, please see the recipe card below!

How to make the best crockpot reuben dip.

Here's an overview on how to make this recipe. See the recipe card below for complete instructions. Enjoy!

    1. Add all ingredients to the slow cooker and stir to combine.
    2. Cook on low until the dip is hot and creamy, stirring occasionally.
    3. Switch to warm and serve with rye bread or crackers.

    Make it your way.

This crockpot reuben is easy to customize depending on what you have on hand.

    • Use Russian dressing instead of island dressing for a slightly sharper flavor.
    • Add extra Swiss cheese for a cheesier dip.
    • Stir in additional corned beef if you want it extra hearty.
    • Try baking leftovers in the air fryer with rye bread slices for a crispy twist.

    How to serve it.

This slow cooker reuben dip is best served warm right from the cooker.

    • Serve with rye bread, cocktail rye, or rye toast points.
    • Offer crackers for easy scooping.
    • Keep the crockpot on warm during parties so it stays creamy for hours.
    • This pot reuben dip also works well as part of a larger spread of dip recipes.

    Kori's tips.

    • Drain the sauerkraut really well to keep the texture creamy instead of loose.
    • Stir the dip every 30 minutes so the cheese melts evenly.
    • If the dip thickens too much over time, stir in a small splash of thousand island dressing to loosen it up.

    FAQ's

What is the best way to store it?

Store leftover reuben dip in an airtight container in the refrigerator for up to 3 days.

    Can I freeze it?

Freezing isn't recommended since cream cheese and swiss cheese can change texture after thawing.

What's the best way to reheat it?

Reheat gently in the slow cooker on low or in short intervals in the microwave, stirring between each round.

    Notes

For more helpful hints, substitution ideas, slow cooking tips, and other delicious recipe ideas, check out my post above.
CROCKPOT COOKING TIPS: Every slow cooker heats a little differently, so cooking times can vary. Once you know how your crock pot runs (hotter or cooler), you can adjust as needed.
TIPS: Make sure the sauerkraut is very well drained to prevent a watery dip, and stir occasionally so the cheese melts evenly. If the flavor leans sweet from the dressing or sauerkraut, balance it with 1 tablespoon vinegar and salt to taste.
VARIATIONS: Swap Swiss for shredded Gruyère or add a pinch of caraway seeds for classic reuben sandwich flavor. Add in a bit of Worcestershire sauce to boost the savory, deli-style flavor.
SERVING SUGGESTIONS: Serve warm with toasted cocktail rye, rye crackers, or pumpernickel bread rounds. It's also really good with fresh veggies such as celery.
