Ingredients
- 2 pounds boneless skinless chicken breasts
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon salt (plus extra to taste)
- ½ teaspoon black pepper (plus extra to taste)
- 1 tablespoon minced garlic
- 1 cup chicken broth
- 8 ounces cream cheese (warmed in the microwave to soften)
- 1 cup grated Parmesan cheese
- 16 ounces penne or rotini pasta (cooked and drained according to package instructions)
- 1 cup heavy cream or half-and-half
- Optional thickener: 2 tablespoons of cornstarch whisked with 2 tablespoons of cold water
- Optional for serving: chopped parsley and extra parmesan for serving
Instructions
- Place chicken in the slow cooker with broth, minced garlic, garlic powder, onion powder, salt, and pepper.

- Cover and cook on low 4 to 5 hours or high 2½ to 3 hours, until chicken is tender and shreddable. Remove from the pot and shred.

- In a separate bowl whisk together warmed cream cheese and 2 ladles of hot pot juices until smooth.
- Add the chicken back to the crockpot, cooked pasta, cream cheese mixture, cream or half and half, and parmesan. Cover and continue cooking until warmed through, about 10 to 20 more minutes. Season to taste.
