    The backstory.

This one started as an easy way to make a warm side dish without having to keep an eye on the stove. I wanted something simple to go with tacos that could also double as a dip if we had chips out - nothing fancy, just something that worked. After a little testing, this version stuck. It's the kind of recipe you toss in the slow cooker earlier in the day and know it'll be ready when everything else is.

    It's a must make.

When slow cooker refried beans are this easy and still hit that cozy, flavorful note, they tend to show up on repeat.

    • Weeknight easy. Everything goes in the crockpot in minutes, making it perfect for busy nights when dinner needs to handle itself.
    • Big flavor, simple ingredients. Diced tomatoes, green chilies, taco seasoning, and cheese turn basic canned beans into something craveable.
    • Works with a lot of meals. Great as a side dish for tacos, rice bowls, or anything Mexican-inspired.
    • Family-friendly win. Mild, creamy, and cheesy - it hits that comfort food sweet spot for both kids and adults.

    Let's talk flavor and texture.

These refried beans come out creamy, warm, and just a little cheesy in the best way. The diced tomatoes and green chilies add a subtle pop of flavor without overpowering, while the sharp cheddar melts right in for that smooth, scoopable texture. It's hearty, cozy, and just the right balance of savory and comforting.

    1. Add the diced tomatoes, refried beans, and taco seasoning to the crockpot and stir to combine.
    2. Cover and cook on low until everything is heated through, stirring once during cooking.
    3. Stir in most of the cheese, saving a little for the top.
    4. Sprinkle the remaining cheese over the top and let it melt before serving.

    Make it your way.

There are plenty of delicious ways to make refried beans in slow cooker style your way.

    • Swap the diced tomatoes and green chilies for your favorite salsa for a different flavor twist.
    • Stir in a little sour cream or cream cheese at the end for extra creaminess Add a pinch of cumin or garlic powder for a deeper flavor.

Slow cooker refried beans can be served in a variety of different ways.

    • Spoon them into a bowl and add a little extra cheese or a dollop of sour cream for a simple side dish.
    • Serve alongside tacos, enchiladas, or rice bowls to round out dinner.
    • Keep them a little looser and set them out with tortilla chips for a warm, easy dip everyone can grab from.

    Kori's tips.
