    The backstory.

This is one of those dinners that came together on a day when I needed something simple that I knew would work. It's become a go-to around here when I want something warm, filling, and easy to pull together at the end of the day.

    It's a must make.

Slow cooker sausage and peppers is one of those dinners you end up coming back to again and again because it's simple, filling, and always hits the spot.

    • It's a true dump and go dinner. Everything goes into the slow cooker and you're done - no babysitting required.
    • Big Italian flavors with simple ingredients. Marinara sauce, garlic, and Italian seasoning do all the heavy lifting here.
    • Super versatile. Serve it over pasta or rice, on a hoagie, or however you like it.
    • Perfect for busy nights. It's the kind of weeknight dinner that works even when your schedule doesn't.

    Let's talk flavor and texture.

You've got juicy Italian sausage soaking up rich marinara sauce, softened bell peppers that turn perfectly tender, and onions that melt right into the mix. The garlic and Italian seasoning bring everything together with that classic, cozy flavor. Every bite is saucy, savory, and just a little bit sweet from the peppers - it's especially good with a sprinkle of parmesan or melted mozzarella on top.

    What you'll need.

Italian-style crockpot sausage and peppers keeps things simple with just a handful of ingredients.

    • Italian sausages: The star of the dish - use mild, sweet or hot depending on your preference.
    • Onion: Adds a little sweetness and depth as it cooks down.
    • Bell peppers: Any color works here and gives that classic sausage peppers and onion crockpot feel. Yellow, red, and orange are sweeter and add a nice flavor.
    • Garlic: Brings in that bold, savory flavor.
    • Italian seasoning: Ties everything together with those classic Italian flavors.
    • Marinara sauce: The base that keeps everything juicy and flavorful.
    • Salt and pepper: Just enough to balance everything out.
    • Optional garnish: Extra marinara, parmesan, mozzarella, or fresh herbs if you've got them on hand.

For exact ingredient quantities, please see the recipe card below!

How to make crockpot Italian sausage and peppers.

Here's an overview on how to make this recipe. See the recipe card below for complete instructions. Enjoy!

    1. Layer sliced onions in the bottom of your slow cooker.
    2. Add the sausages on top, then pile in the bell peppers.
    3. Sprinkle in garlic, Italian seasoning, salt, and pepper.
    4. Pour marinara sauce over everything and spread it out.
    5. Cover and cook on low until the sausages are cooked through and everything is tender.

    Make it your way.

Crockpot Italian sausage and peppers leaves plenty of room to mix things up and make it your own.

    • Swap in spicy sausage if you want a little heat.
    • Add mushrooms or zucchini for extra veggies.
    • Use diced tomatoes instead of marinara sauce for a lighter feel.
    • Sprinkle mozzarella on top at the end and let it melt for a cheesy finish.
    • Turn it Cajun-style with Cajun seasoning and tomatoes for a fun twist.

If sausage dinners are already on repeat at your house, these are a few more that always come through when you need something easy and filling. Slow Cooker Sausage and Potatoes is simple and hearty with that classic meat-and-potatoes comfort. Crock Pot Stuffing with Sausage brings those cozy, savory flavors that feel right at home during the holidays or alongside a weeknight roast. Crock Pot Chili with Beef and Sausage is bold, rich, and perfect when you want something a little more filling with big flavor.

    How to serve it.

Slow cooker sausage and peppers is one of those meals you can serve a dozen different ways.

    • Spoon it over pasta with Italian sausage and peppers for a classic dinner.
    • Pile it on a hoagie roll for an easy sandwich night.
    • Serve it over rice or mashed potatoes to soak up all that sauce.
    • Add a sprinkle of parmesan or mozzarella and a fresh garnish to finish it off.
    • Wondering what to serve with Italian sausage and peppers? A simple salad or roasted veggies keeps it balanced.

    Kori's tips.

    • Let the sausages sit on top of the onions - it helps prevent sticking and adds flavor.
    • Slice peppers a little thicker so they hold their texture after cooking.
    • Shortcut alert - use pre-sliced peppers and onions to make it even more hands-off.
    • Add extra marinara at the end if you like it saucier, especially if serving over pasta.
