All-in-One Meal. This recipe is perfect for an easy dinner any day of the week because everything is cooked together in the crockpot. It has potatoes, onions, carrots, mushrooms, beef chuck roast, and a rich gravy.
Italian Style. Italian seasoning is added to the crockpot to make this an Italian-style crockpot roast. Use a dried herb blend, or you can use fresh Italian herbs such as oregano, thyme, rosemary, and sage for a brighter flavor.
Family Favorite. My family loves a classic pot roast because of all of the ingredients. Everything is cooked so they are tender and flavorful, and you can choose how much of each item you want--swap out any veggies for ones you want also!
Pot Roast Recipe Crockpot Ingredients
Here are the ingredients you will need to make this easy slow cooker pot roast:
- Condensed Cream of Mushroom Soup
- Tomato Paste
- Onion Soup Mix: store brand or name brand can be used; you can usually find this near the other soups in your local grocery store.
- Garlic Powder
- Italian Seasoning: use your favorite blend--usually includes oregano, thyme, basil, rosemary, and marjoram.
- Cornstarch: this is added as a thickener in your soup mixture for it to be turned into a gravy.
- Kosher Salt
- Ground Black Pepper
- Onion: white, yellow or sweet onion can be used in this recipe.
- Baby Potatoes: small baby potatoes of any variety can be used, such as red, gold, or purple.
- Baby Carrots: baby carrots are easy to use in this recipe as they are prepped and don't need to be cut. You can use whole carrots and peel and cut them if preferred.
- Canned Fire Roasted Tomatoes
- Mushrooms: white or baby bella button mushrooms can be used.

Substitutions and Variations
- Use pork butt or pork shoulder roast in place of beef chuck roast if desired.
- Use brown gravy mix instead of onion soup mix.
- Adjust any seasonings to taste.

- Use homemade versions of cream of mushroom soup or tomato paste if you have a good one! I use canned to save on preparation time.
- Omit baby potatoes and substitute them with Yukon gold potatoes or russet potatoes cut into bite-size cuts.
- Substitute any vegetables of your choice with the carrots in this recipe. Use dense vegetables that will hold up in a long cooking process.
- Add a splash of red wine to your gravy mixture for added flavor.
- Drizzle a little olive oil on the bottom of your slow cooker to prevent your veggies from sticking to the bottom.

How To Make Crockpot Chuck Pot Roast
- In a small bowl, mix together the cream of mushroom soup, tomato paste, onion soup mix, Italian seasoning, garlic powder, cornstarch, salt, and pepper.
2. Spray slow cooker with nonstick spray. Add onions, potatoes, and carrots to the bottom of the crockpot. Place chuck roast on top. Top with mushrooms and tomatoes. Spread sauce on top.
Hint: Placing your onions, potatoes, and carrots at the bottom of the crockpot and putting the chuck roast on top helps to cook the vegetables quicker and the meat more evenly.

Tender Pot Roast Crockpot Tips
- For added flavor, sear your roast on all sides so it is golden brown. This will help seal in the natural juices and add a deeper flavor.
- Be sure to either spray your crockpot with non-stick spray or use a crockpot liner to help prevent things from sticking to your crockpot and burning.
- If you use a larger chuck roast, increase your cooking time as needed so that it is able to get nice and fall apart tender and juicy.
Crockpot Chuck Roast with Carrots and Potatoes FAQ's
Once cooled, transfer to an airtight container and store in the fridge for up to 5 days.
Transfer the amount you want to reheat to a microwave-safe dish and warm start with 60 seconds. Continue to cook in 30-second increments until your desired temperature is reached.
It is not required to brown your chuck roast before transferring it to the crockpot. I do suggest searing all sides of your roast if you want to encourage the natural juices to stay in the roast for a more flavorful and tender roast.
This will depend on the size of the roast and if you cook on low or high. For example, in this recipe, we slow cooked a 3-4 pound chuck roast on low for about 8 hours until it was super fall-apart tender. If you cook a larger roast, you may need to cook it for longer, and if small, then shorter.
Most of the time, if your pot roast is still tough, you may need to cook it for longer. Beef chuck roast gets more tender the longer you cook it, so keep cooking it and wait for it to get tender.
