This amazing meal-in-one slow cooker beef pot roast is so easy to make in the crock! You'll love this Italian-style fork-tender chuck roast with potatoes, carrots, mushrooms, onions, and diced tomatoes - cooked in a rich and delectable gravy.
1packetonion soup mix(brown gravy mix can be used instead)
1teaspoongarlic powder
1tablespoonItalian seasoning
1tablespooncornstarch
½teaspoonkosher salt
½teaspoonground black pepper
1mediumonion(thinly sliced)
1poundsmall baby potatoes
1poundbaby carrots
1(3 to 4 pound)boneless chuck roast
14.5ouncediced fire roasted tomatoes
8ounceswhite or baby bella mushrooms(sliced)
Instructions
In a small bowl, mix together cream of mushroom soup, tomato paste, onion soup mix, Italian seasoning, garlic powder, cornstarch, salt, and pepper.
Spray slow cooker with nonstick spray. Add onions first, then potatoes and carrots to the bottom of the pot. Place chuck roast on top. Top with mushrooms and diced tomatoes. Spread the sauce over the roast and vegetables.
Turn on low and cook for 8 to 9 hours, or until meat is very tender and falls apart.
