    First Date Dish. This crockpot Marry Me Chicken recipe is the dish I made my husband on our first date. He said he knew he was going to marry me as soon as he ate it! Make it, and you'll see why - it's drool-worthy!

    Easy Impressive Dinner. Not only delicious it is super easy to make! Add all ingredients (except cream cheese, parmesan cheese, onions, and basil) and slow cook. Add in remaining ingredients 30 minutes before serving and serve over pasta, rice, or potatoes!

    Here are the ingredients you will need to make this marry me chicken crock pot recipe:

    • Boneless Skinless Chicken Breasts: you can also use boneless skinless chicken thighs instead of chicken thighs- chicken thighs are a little fattier and slow cook well to stay juicy and tender.
    • Canned Diced Tomatoes with Garlic and Onion
    • Tomato Paste:
    • Sun Dried Tomatoes: you can usually find a jar of sundried tomatoes by the pasta or jarred tomato sauce. I have also found them near the condiments.
    • Canned Cream of Mushroom Soup: you can also use cream of chicken soup if you prefer.
    • Italian Seasoning: an Italian seasoning blend usually includes oregano, basil, marjoram, rosemary, thyme, sage and savory.
    • Cream Cheese: use full-fat or reduced-fat cream cheese in this recipe.
    • Parmesan Cheese: I used crumbled parmesan cheese in this recipe. It adds flavor and helps thicken the sauce.
    • Fresh Basil
    • Green Onion: fresh chopped green onion is used in this recipe, but you can also use chives instead.
    • Salt and Pepper
    • For Serving: serve this chicken and sauce over pasta linguine or spaghetti, rice, or mashed potatoes.

    • You can use either chicken breasts or boneless skinless chicken thighs.
    • Substitute 1 cup of feta cheese instead of parmesan cheese, or combine both.
    • Use fresh parsley instead of fresh basil.
    • For extra creaminess, add a splash of heavy cream.
    • Add a small to medium diced onion for extra flavor.

    Ingredients
      

    • 3 to 4 pounds boneless skinless chicken breasts or thighs
    • 1 (14.5-ounce) can diced tomatoes with garlic and onion (drained)
    • 1 tablespoon tomato paste
    • ½ cup sundried tomatoes (slivered and diced)
    • 1 (14.5-ounce) can condensed cream of mushroom soup
    • 1 tablespoon italian seasoning
    • 8 ounces cream cheese (softened)
    • 1 cup parmesan cheese (crumbled)
    • ¼ cup fresh basil (chopped)
    • ¼ cup green onion (chopped)
    • salt and pepper to taste
    • for serving: 16 ounces hot cooked pasta linguine or spaghetti, rice, or mashed potatoes.

    Instructions
     

    • Spray slow cooker with nonstick spray. Add cream of mushroom soup, diced tomatoes, tomato paste, sundried tomatoes, and Italian seasoning. Stir until blended. Nestle the chicken into the sauce, spreading some of it over the top.

    • Cover and cook on low for 5 to 6 hours or until chicken is done. Remove the chicken once done, set it aside, and keep it warm.
