SEASON PORK LOIN

Dry the pork roast with paper towels. Sprinkle BBQ seasoning all over the roast.

SEAR PORK LOIN

Preheat a large skillet to medium-high heat with olive oil until hot. Sear the roast and brown all sides for about 7-10 minutes. Place it in slow cooker.

SAUTE ONIONS

Remove roast and add onion. Saute onion until translucent. Add the broth and vinegar to deglaze, and scrape any bits off the bottom. Transfer to crockpot.

SLOW COOK

Cover and cook the roast for 2-3 hours.

LET PORK REST

Cover and cook the roast on low for 2 to 3 hours. Place roast on a board and tent with foil for 20 minutes before slicing.
