Add all ingredients to the crockpot and whisk to combine.
Cover and cook on low until heated through, about 1 to 2 hours.
Adjust sweetness, coffee concentration, spice, and cream to your taste.

AUTHOR'S NOTE: Getting that perfect latte to your taste is important! Adjust any ingredient you want. If you like your coffee stronger, by all means, add more. If you want more pumpkin, add it in. If you like it sweeter, add more sugar.
VARIATIONS:
Creamy oat milk or almond milk may be substituted for milk. For a creamier latte, use some heavy cream or half and half. Substitute low-fat or fat-free ingredients if desired.
Omit the pumpkin puree and sugar and use pumpkin coffee syrup. This does not have the same taste as fresh pumpkin, so you will have completely different results.
A sugar-free sweetener like allulose or stevia may be used.
TIP TIPS: This can be served cold. Refrigerate and drink it all week over ice! If serving for a party, everything can be mixed together in advance and refrigerated until ready to heat; Use only unsweetened pumpkin puree, do not use pumpkin pie filling as it is presweetened and has spices.
SERVING SUGGESTIONS: Set mugs out next to the slow cooker along with whipped cream and cinnamon for sprinkling.
