This ham and potato soup crockpot recipe is creamy, cozy, and loaded with smoky ham, tender potatoes, and corn. Make it loaded with cheese, sour cream, and chives for extra comfort.
Optional loaded potato soup:1 to 2 cups shredded cheddar cheese, ½ cup sour cream, 2 tablespoons diced chives, salt and pepper to taste.
Instructions
Add potatoes, sweet potatoes, carrots, celery, ham, onion, corn, broth, garlic powder, paprika, thyme, pepper, and salt to a greased slow cooker. Stir to combine.
Cover and cook on LOW for 4 to 6 hours or HIGH for 2 to 3 hours, until the potatoes are tender.
Whisk together cornstarch, heavy cream, and a couple ladles of soup. Stir into the soup, and cook an additional 15 to 20 minutes to thicken. (Note: if making loaded potato soup, add the ingredients here. Stir until cheese is melted and the soup is thickened)
