This scalloped potatoes and ham in the crock pot recipe is family-friendly and makes great use of leftover ham. You'll love the tender sliced fresh potatoes and diced ham cooked perfectly together in a creamy and cheesy herb sauce.

Instructions
In a medium bowl whisk together that cream of mushroom soup, milk, constarch, dried onion, salt, pepper, and thyme.
Place the potatoes, ham, and grated cheeses in the crockpot.
Pour the soup and milk mixture over the top and stir everything together.
Cover and cook on low for 5 to 6 hours or until the potatoes are tender and cheese is melted. Let potatoes sit for 10 to 15 minutes before serving.

VARIATIONS: leftover ham can be used as well as a ham steak; smoked sausage or kielbasa can be substituted for the ham
