A creamy Mediterranean-inspired slow cooker frittata made with eggs, roasted red bell peppers, baby spinach, green onions, cottage cheese, and feta for an easy, protein-packed breakfast or brunch.
1cupjarred roasted red bell peppers(drained and chopped)
2sliced green onions(plus extra for garnish)
½cupcrumbled feta cheese
½cupshredded monterey jack cheese or mozzarella
10largeeggs
½cupmilk
½cupcottage cheese
1teaspoonItalian seasoning
½teaspoonsalt(plus extra to taste)
½teaspoonblack pepper(plus extra to taste)
¼ teaspoonhot sauce(plus extra to taste)
Instructions
In a lightly greased slow cooker, evenly layer the roasted red bell peppers, spinach, green onions, feta, and jack cheese to the slow cooker.
In a bowl, whisk together the eggs, milk, cottage cheese, Italian seasoning, hot sauce, salt, and pepper. Pour the egg mixture over the vegetables and cheese.
Cover and cook on low for 2½ to 3 hours, until the center is set. Turn off the slow cooker and let rest for 10 minutes before slicing. Sprinkle with a little extra cheese if you want. Garnish with green onion.
