This brown sugar and pineapple crockpot ham is tender, juicy, and coated in a sweet, sticky glaze with warm maple and spice. An optional splash of bourbon adds extra depth, making it perfect for Easter or holiday dinners.
7 to 9poundfully cooked spiral sliced ham(make sure to buy a ham that will fit in your crockpot!)
1cuppacked brown sugar
½cuppure maple syrup
20ouncecan crushed pineapple, undrained
2tablespoonsDijon mustard
1teaspoonground cinnamon
¼teaspoonground cloves
To thicken the glaze.
1tablespooncornstarch
1tablespoonwater
Optional:1 to 2 tablespoons of butter and 1 tablespoon of bourbon
Optional garnish:
3 to 5 pineapple slices and a sprinkle of fresh chopped parsley(pineapple can be seared, broiled, or grilled for a little color if desired)
Instructions
Place the ham slices up in a large slow cooker, trimming slightly if needed to fit. Discard any glaze packet.
In a bowl, stir together the brown sugar, maple syrup, crushed pineapple with juice, Dijon mustard, cinnamon, and cloves until combined. Pour the mixture evenly over the ham, letting it run between the slices.
Cover and cook on LOW for 2 to 4 hours - only cook until the ham reaches the recommended package temperature. Remember that the ham is cooked, watch the temperature carefully to avoid overcooking. Spoon some of the glaze over the top once or twice during cooking if convenient.
To thicken the glaze: In a small bowl, whisk the cornstarch with 1 tablespoon cold water until smooth. Pour 2 to 3 cups of the pot juices into a medium skillet or saucepan. Stir in the cornstarch mixture, butter, and bourbon (if using). Bring to a simmer over medium heat and cook 6 to 8 minutes, stirring occasionally, until the glaze is thickened and slightly reduced. Spoon over the ham before serving.
Transfer the ham to a serving platter (or leave it in the crockpot). Garnish with pineapple slices and chopped fresh parsley for color. Let it rest for 10 to 15 minutes before serving.
