This crockpot broccoli and cheese casserole is creamy, comforting, and easy to make. Tender broccoli cooks in a cheesy ranch-seasoned sauce, then gets topped with melty cheddar and buttery Ritz crackers just before serving.

Instructions
Add the broccoli florets to a greased crockpot. Sprinkle the ranch seasoning mix evenly over the broccoli. Pour in the cheddar cheese soup and water (or broth). Stir gently to combine.
Cover and cook on LOW for 4 to 5 hours, or until the broccoli is fork-tender. Stir occasionally.
Stir in the sour cream and shredded cheddar cheese. If needed, cover and cook for an additional 10 to 15 minutes - or just until the cheese is melted and the broccoli is warm.
When ready to serve sprinkle with extra cheese, if desired, the top with the crumbled Ritz crackers. Garnish with fresh parsley or sliced green onion.
