Instructions
Generously grease the inside of your slow cooker to prevent sticking (or use a liner). Add the steel-cut oats, water, milk, diced Granny Smith apples, brown sugar, cinnamon, nutmeg, and salt to the crockpot. Stir well to combine.
Cover and cook on LOW for 7–8 hours, until the oats are tender and creamy and the apples are soft.
Stir in the vanilla extract before serving. Add extra milk as needed to loosen the oatmeal to your preferred consistency.

For more helpful hints, substitution ideas, slow cooking tips, and other delicious recipe ideas, check out my post above.CROCKPOT COOKING TIPS: Every slow cooker heats a little differently, so cooking times can vary. Once you know how your crock pot runs (hotter or cooler), you can adjust as needed.TIPS: Steel-cut oats are important for overnight cooking. Do not substitute quick oats, as they will turn mushy. If your slow cooker runs hot, check around the 6½-hour mark. Stir well in the morning before serving.VARIATIONS: Swap one Granny Smith apple for a Honeycrisp if you prefer a slightly sweeter taste. Add chopped pecans during the last hour for extra texture. For extra richness, stir in a tablespoon of butter before serving. The apples will be very soft after cooking, if you prefer some crunchier apples. Cook only half, then add in the remaining half 1 to 1½ hours before serving.SERVING SUGGESTIONS: Serve straight from the crockpot and let everyone customize their bowl. This oatmeal reheats beautifully for meal prep breakfasts all week — just warm gently and add a splash of milk to refresh it.
