This cozy, thick crockpot split pea and ham soup uses leftover ham and there's no chopping required. Frozen mirepoix and jarred minced garlic keep it dump-and-go; an optional ham bone adds extra depth.
2 to 3cupsleftover ham(cubed; if you have a meaty ham bone use only 2 cups of ham)
1pounddried split peas(rinsed)
20ouncebag frozen mirepoix mix (onion, carrot, celery)(If using fresh, dice: 1 medium yellow onion, 3 carrot, 2 celery stalks)
3teaspoonsjarred minced garlic
2bay leaves
2teaspoonsItalian seasoning
1teaspoonsmoked paprika
4cupslow-sodium chicken broth
1 to 2cupswater
Salt and pepper(to taste)
1tablespoondijon mustard
Optional garnish: chopped fresh parsley or dill
Instructions
Add all ingredients except the dijon mustard to the slow cooker (add the optional ham bone now).
Cover and cook on LOW 6–8 hours until peas are soft and soup is thick.
Remove the bay leaf and (if used) the ham bone. Remove any meat from the ham bone and return meat to the crockpot. Stir in dijon mustard.
Adjust consistency with additional broth or water. Salt and pepper to taste.
