A warm, comforting slow cooker oatmeal made with steel-cut oats, mashed banana, brown sugar, cinnamon, and crunchy walnuts. Perfect for an easy make-ahead breakfast.
2cupsmilk(non-dairy, nonfat, skim, or whole is fine)
1very ripe banana(mashed until smooth)
⅓cupchopped walnuts
⅓cuppacked brown sugar(may be omitted)
2teaspoonsground cinnamon
1teaspoonvanilla extract
½teaspoonground nutmeg
½teaspoontable salt
Instructions
Lightly grease a 4-quart slow cooker. Add the oats, mashed banana, walnuts, milk, water, cinnamon, vanilla, nutmeg, and salt. Stir well to combine.
Cover and cook on low for 7–8 hours, until the oats are tender and creamy.
Before serving, stir the oatmeal well to loosen the texture before serving. Add milk if needed. Serve warm with desired toppings.
