1orangeorange (from that orange you will need ½ teaspoon orange zest + ¼ cup orange juice)

3tablespoonsmaple syrup
2teaspoonssoy sauce
¼teaspooncinnamon
¼teaspoonnutmeg
pinchcayenne pepper
1sprigfresh thyme(leaves removed and minced)
salt and pepper to taste
Instructions
Add carrots and water to the crockpot. Cover and cook on low for 3 to 4 hours on low (2 to 3 hours on high), or until the carrots are tender.
Drain carrots and return to the crockpot to keep warm.
Add the remaining ingredients to a small saucepan. Stir together until melted.
Drizzle with maple syrup mixture and toss together. Salt and pepper to taste. Garnish with additional fresh thyme.

VARIATIONS: 1 tablespoon of butter may be melted with the maple syrup and orange zest mixture; add more maple syrup if desired; honey or brown sugar can be used in place of the maple syrup.
