This warm and cozy crock pot chicken parmesan soup recipe is a modern take on your favorite weeknight dinner - only now it's made easy in a slow cooker! You'll love the delicious marinara-based chicken broth with tender shredded chicken, vegetables, pasta, and cheesy goodness.
1(14.5-ounce)can fire-roasted diced tomatoes(plain diced tomatoes are fine too)
6cupschicken broth
1tablespoonitalian seasoning
½teaspoonkosher salt
½teaspoonground black pepper
6ouncesrotini pasta
½cupparmesan cheese(freshly grated)
optional garnish: fresh chopped parsley or basil for garnish
Instructions
Add all ingredients except the dry pasta and cheese to the slow cooker. Cover and cook on low for 4 to 6 hours.
Remove chicken and shred with 2 forks. Return chicken to the pot.
Add the pasta to the slow cooker. Cover and continue cooking until the noodles are tender, about 15 to 30 minutes.
After serving sprinkle with freshly grated parmesan cheese. Garnish with fresh basil or parsley.

VARIATIONS: Use whatever pasta you have on hand. If it's spaghetti or lasagna noodles, break them apart; a combination of parmesan and mozzarella cheese may be used.
