A simply delicious blueberry slow cooker steel cut oats recipe! Creamy yet slightly nutty textured steel cut oats with blueberries and cream, brown sugar, walnuts, butter, and cinnamon. Your kitchen will be filled with a wonderful aroma that's just the thing to wake up to!
½cupoptional: dried cranberries(other dried berries or fruit may be used)
optional for serving: brown sugar, butter, cream, additional blueberries, and nuts.
Instructions
Add the oats, water, and salt to a greased 4 to 6-quart crockpot and stir.
Cover and cook on low for 7 to 8 hours - or until the oats are tender. Caution: know your crockpot before cooking oats overnight. Some pots run very hot on low and can be cooked in as little as 3½ to 4 hours.
Stir in butter, brown sugar, vanilla, cinnamon, and walnuts. Add blueberries and gently stir. Let the oatmeal sit for 10 minutes. Serve.

Sweeten the oats to your taste preference; I used a moderate amount of sweetener so you could adjust the sweetness to your liking.
Slow cookers can vary drastically in temperature. Know your crockpot before turning these on and cooking overnight. I made these in two crockpots (both were set on LOW) - one had the oats done and boiling in 4 hours - and the other took 7 hours.
VARIATIONS: Make these oats with any of your favorite ingredients - any combination of fresh or dried berries is lovely; chopped almonds or pecans can be used instead of walnuts; coconut can be added with the blueberries; fresh banana can be used instead of blueberries; maple syrup makes a delicious sweetener instead of brown sugar.
