This marry me chicken slow cooker recipe is so good it may just inspire a proposal and declarations of love! It did for me! Easy tender chicken in creamy tomato basil sauce over pasta. Yes, please! Who isn't gonna love this dish?
3 to 4poundsboneless skinless chicken breasts or thighs
1(14.5-ounce)can diced tomatoes with garlic and onion(drained)
1tablespoontomato paste
½cup sundried tomatoes(slivered and diced)
1(14.5-ounce)can condensed cream of mushroom soup
1tablespoonitalian seasoning
8ouncescream cheese(softened)
1cupparmesan cheese(crumbled)
¼cupfresh basil(chopped)
¼cupgreen onion(chopped)
salt and pepper to taste
for serving: 16 ounces hot cooked pasta linguine or spaghetti, rice, or mashed potatoes.
Instructions
Spray slow cooker with nonstick spray. Add cream of mushroom soup, diced tomatoes, tomato paste, sundried tomatoes, and Italian seasoning. Stir until blended. Nestle the chicken into the sauce, spreading some of it over the top.
Cover and cook on low for 5 to 6 hours or until chicken is done. Remove the chicken once done, set it aside, and keep it warm.
Add the softened cream cheese, parmesan cheese, green onions, and fresh basil. Stir to melt. (Tip: Warm the cream cheese using the microwave to soften it and make it easier to melt).

TOP TIPS: It is easier to get the cream cheese to melt if it is very soft; I warm it in the microwave before adding it to the crockpot.
VARIATIONS: Substitute either chicken breast or thighs. Chicken can be cut up into bite-sized pieces for faster cooking. 1 cup feta cheese may be used in place of parmesan cheese (or a combination of both). Fresh parsley may be used, as well as basil. For additional creaminess, a small amount of heavy cream may be added.
SERVING SUGGESTIONS:Serve chicken and sauce over hot cooked pasta, rice, or mashed potatoes. Season to taste with salt and pepper. Breadsticks or garlic bread pair well with this dish and are perfect for soaking up the excess sauce.
