Poached Salmon
▢

lemon or lime
(thinly sliced)

olive oil

(6-ounce)
salmon fillets
(skin on or off)

salt

ground black pepper

sprig
fresh dill
Instructions
Mix all ingredients for the dill sauce in a small bowl. Cover and refrigerate (up to 3 days ahead).
Place slices of lemon on the bottom of the crock pot in a single layer. Place salmon fillet on the slices.
Add the sprig of dill, drizzle with olive oil, and sprinkle with salt and pepper. Cover with just enough water to cover the fillets.
Cover and cook on low until the salmon reaches 135℉ when tested with a thermometer, about 1 to 3 hours.
Carefully remove the salmon pieces and cover with foil until ready to serve.

VARIATIONS:
Use any citrus fruit - lemon, lime, grapefruit, oranges. Each one will have it's own unique flavor.
NOTES:
be careful not to overcook the salmon. Once the thermometer reaches 135 degrees, take it out and cover with foil
SERVING SUGGESTIONS:
Adjust seasoning with salt and pepper. Serve with lemon wedges, dill sauce, and a garnish of fresh dill.
