A ridiculously easy crockpot meal idea - just 4 ingredients and you'll have the most wonderful savory crockpot chicken and stuffing dinner ready to slow cook in less than 5 minutes!
2poundsboneless skinless chicken breasts(about 6 to 8 breasts)
1(10.5-ounce)can cream of chicken soup (low sodium)
2cupslow-sodium chicken broth(divided)
1(6-ounce)box of chicken or herb-flavored packaged stuffing mix
Instructions
Spray slow cooker with nonstick spray.
In a small bowl, mix the cream of chicken soup and 1 cup chicken broth together.
Spread a third of the soup mixture on the bottom of the crock pot, then place chicken breasts on top. Pour the remaining amount of soup over the top.
In a medium-sized bowl, mix dried stuffing mix and 1 cup chicken broth. Spoon over the chicken.
Cover and cook on low heat for 3 to 5 hours or until the chicken is done (no longer pink, and the internal temperature should be 165 degrees F.)
Fluff any dry stuffing into the pot juices before serving. Season to taste with salt and pepper if needed.

NOTES: chicken is done when its internal temperature reaches 165 degrees F.
VARIATIONS: A 10-ounce bag of frozen green beans can be added over the top of the chicken then topped with soup followed by the stuffing. Note if you add green beans, 1 tablespoon of cornstarch should be whisked in with the broth and chicken chicken soup. ¼ cup melted butter can be drizzled over the top of the stuffing prior to serving.
SERVING SUGGESTIONS: Serve over mashed potatoes or rice. Garnish with fresh parsley. Pairs well with green beans or broccoli.
